Our next trial will be baking soda. I was going to do yogurt, but he doesn't seem to like him. He hasn't had a reaction in the 2 days we tried, but he really isn't eating much of it either. So we're moving on!
I used regular baking soda that contains cornstarch, because I'm not certain he failed corn. He started teething at the same time which for him is very similar to a chronic FPIES reaction.
The Pancakes:
I had cooked a big bowl of quinoa the other day, so I ground up enough of that to get about 1/2 cup. Then I added 1/4 tsp baking powder and enough water to get a pancake batter consistency. I sprayed the pan very lightly with canola oil (we haven't done an actual trial but he's been ok the few times he's had a little of it.)
I'll warn you that flipping them is next to impossible!! They seem to take longer than normal pancakes to cook and when you try to flip them, they fall apart. But once you get a "crust" on both sides, they much easier to work with. Also, make sure to make them kind of flat so the insides cook well too before the outside burns.
Update: I made the again with leftover batter. This time I dumped it in and stirred it around like I was making scrambled eggs. Eventually it started to form a crust on one side and then I could flip it.
